Red Velvet Cupcakes
w/ Cream Cheese Frosting
These cupcakes were so much fun to make and decorate! I used Duncan Hines Red Velvet cake mix for the cupcakes and topped it off with a new cream cheese frosting.
Cream Cheese Frosting
- 1 stick shortening (Crisco)
- 2 tablespoon water
- 4 oz. Philadelphia cream cheese (at room temperature)
- 4 cups confectioners sugar (sifted)
- 1 tsp pure vanilla extract
- 2 Tbsp heavy cream
Using a stand mixer, start creaming the cream cheese, shortening and water together until smooth (you should have NO LUMPS), mix for about 3 minutes. Then, add 1 cup of confectioner's sugar at a time, and mixing in between. Once all the sugar is in, mix on medium for about 5 minutes. It should look nice and smooth. Then, add the heavy cream, and vanilla. Once you incorporated everything, you should have nice stiff looking peeks to your frosting.
Like I said, it was fun decorating these!! I used fun blue polka dot liners I found for $1 at Michael's. And I also got a chance to use my new 1M Wilton piping tip. =) Looks like this...
It was my first time using this tip, so I was super excited about that! I didn't really know which way I wanted to decorate these cupcakes, so I just went for it!!
I ended up with a pretty looking ruffled frosting look. =) Not bad in my book =)
Technique: Hold piping bag with tip about 1 cm directly above the center of the cupcake. While placing even amount of pressure on the top of piping bag, squeeze and let the frosting fall straight on top of the center of the cupcake and stop when you have the desired amount of frosting. The frosting will naturally make a ruffled effect.
