Dark Chocolate Cupcakes w/ Dark & White Chocolate Ganache and Raspberries!

I couldn't help myself...I decided to indulge in more baking and more cupcakes!!!
Made another batch of the infamous dark chocolate cupcakes I do love making...

Can't go wrong with this cupcake, it's easy and fun to make, and definitely shows you took some time and effort to pull it all together. With this batch, I decided to just top the cupcake with dark chocolate ganache, and drizzle white chocolate over it, and garnish with fresh raspberries. Super easy and looks soo good! I ate too much already... 
The cake is super moist, and the dark chocolate is so rich with a slight crunch after it's been chilled in the fridge!! sooo yum! Gotta try this!
This cupcake is definitely for the chocolate lover who appreciated good a good simple chocolate cake!


Princess Color-Themed Cakepops!

A family friend of mine ordered some cakepops for her daughter's 3rd birthday party!

Or course her daughter wanted princess-themed cakepops...
 I just went simple this time and used 3 princess colors... 
They are all made with vanilla cake, with rainbow sprinkles inside, coated with chocolate, and garnished with nonpareils, and sugar crystals...
 (Above: this purple color reminds me of Princess Rapunzel!)
 (Above: this pink once reminds me of the Sleeping Beauty Princess!)
(Above: the left pastel green one reminds me of Princess Jazmine!!!)

OMG! I am suck a sucker for these...

And last one is a pure white one, which is for the Birthday Princess herself!

Dark Chocolate Cupcakes w/ Dark Chocolate Ganache & Raspberries

Double Dark Chocolate Fudge Cupcakes w/ Ghirardelli Chocolate Chips inside, topped w/ Pink Cream Cheese Frosting and Dark Chocolate Ganache, garnished w/ Chocolate Sprinkles and Fresh Raspberries!
Phew, that was a mouthful.

So the other day, I went to buy some fresh raspberries, and then this happened...
... Another happy baker =)

I pretty much used a similar technique and recipe from here

The few changes I made was added some Ghirardelli baking chips into the cupcake batter to add a crunchy texture to the cupcake once you bite into it. So worth the extra step! 

For the ganache recipe, I used 1/2 cup Ghirardelli chocolate baking chips, added 1 ounce of the Baker's chocolate (to make it even more dark), and added about 2-3 Tbsp powdered sugar (or how ever much that suits your taste). See basic instructions here.

Once you have the cupcakes placed in the cupcake tray, add in your Ghirardelli baking chips (about 4-5 pieces), bake in a pre-heated oven at 350 F for only about 10 minutes (or until toothpick comes out clean), and they should come out looking like these!!!

As for the frosting, I decided to add pink cream cheese frosting, chocolate sprinkles and raspberries!!! They turned out great!
 It did get a bit messy with the ganache, but who cares!!! it was so much fun decorating with it!
 When all is finished, now you can eat you cupcake!!!
