Double Dark Chocolate Fudge Cupcakes w/ Ghirardelli Chocolate Chips inside, topped w/ Pink Cream Cheese Frosting and Dark Chocolate Ganache, garnished w/ Chocolate Sprinkles and Fresh Raspberries!
Phew, that was a mouthful.
So the other day, I went to buy some fresh raspberries, and then this happened...
... Another happy baker =)
The few changes I made was added some Ghirardelli baking chips into the cupcake batter to add a crunchy texture to the cupcake once you bite into it. So worth the extra step!
For the ganache recipe, I used 1/2 cup Ghirardelli chocolate baking chips, added 1 ounce of the Baker's chocolate (to make it even more dark), and added about 2-3 Tbsp powdered sugar (or how ever much that suits your taste). See basic instructions here.
(Below: an ounce of Baker's Chocolate unwrapped)Once you have the cupcakes placed in the cupcake tray, add in your Ghirardelli baking chips (about 4-5 pieces), bake in a pre-heated oven at 350 F for only about 10 minutes (or until toothpick comes out clean), and they should come out looking like these!!!
As for the frosting, I decided to add pink cream cheese frosting, chocolate sprinkles and raspberries!!! They turned out great!
It did get a bit messy with the ganache, but who cares!!! it was so much fun decorating with it!
When all is finished, now you can eat you cupcake!!!
