October Cookies!

October Cookies! 
(Recipe adapted from here)
The original recipe makes Oreo-stuffed cookies, which I've already made before, seen here. So I decided to make drop cookies this time. All that caramel goodness just makes me feel like October is here! I love fall season and October is definitely cookie season for my kitchen!
Ingredients
Makes up to 24 cookies

3 cups all-purpose flour, sifted
1 tsp kosher salt
1 tsp baking soda
2 sticks unsalted butter, room temp
1 cup dark brown sugar
1 cup granulated sugar
2 large eggs
1 Tbsp pure vanilla extract
2 cup Nestle's dark chocolate morsels
about 24 Rolos, cut into 4 pieces each
Instructions
1. Preheat oven at 350 F. Prepare baking sheet with parchment paper.
2. Make batter. In a large bowl, sift and mix flour, salt, and baking soda. In a separate bowl, mix the butter and sugars until fluffy and well incorporated, add eggs, and vanilla.
3. Mix wet and dry ingredients together just until almost all the flour is incorporated.
4. Add chocolate morsels and cut-up Rolos.
5. Scoop up about 1-inch cookie rounds, and place onto parchment-lined baking sheet and bake for about 10-11 minutes.
6. Remove from oven and cool onto cooling racks.
Look at all that ooey-gooey caramel...
